According to the Specialty Coffee Association (SCA), specialty coffee is the highest grade of coffee beans, with a minimum score of 80+ points on the 100-point Specialty Coffee Association scale. These beans undergo a strict process of evaluation by Q-graders, who assess aroma, taste, acidity, body and balance to ensure they meet the highest standards.
Specialty Coffee:
is hand picked at it's peak ripeness for maximum flavor
generally contains 0-5 minor defects per 350g (commercial coffee allows dozens)
is typically small batch roasted allowing preservation of it's natural complexity
