From the misty highlands of South Sulawesi, this month's selection showcases the Torajan tradition of exceptional coffee cultivation. Grown at elevations reaching 2000 MASL among dramatic rock formations and rice paddies, each small-farm harvest is processed using the distinctive Giling Basah wet-hulling method. This technique removes parchment at high moisture content, yielding the signature bluish bean and rich Indonesian character. Sulawesi is full-bodied, smooth, and low in acidity.
Local producers, organized into community micro-mills, meticulously sort, depulp, ferment, and dry their cherries on sun-exposed patios.
